Raw Almond Burger with Cashew Cheese


SURPRISE! I scheduled one last post to be published post-departure. By the time you are reading this, I should be living it up in Europe...let's hope. Unfortunately, this is as far ahead as I could get...see you in less than 6 weeks.

I made these Raw Almond Burger for James & I, lamenting our distance from WOW. Don't be fooled by the minimal and simple ingredients in this recipe, these burgers are amazing.



Notes for Raw Almond Burger:

  • As I am not fully a raw foodist...I made and used roasted garlic.
  • I used coconut oil.
  • I ate them raw.
  • Don't be fooled by the crumbly texture in the food processor—once you handle them and form them into burgers, they stick and hold together perfectly.
  • We ate them with Raw Cashew Cheese, sliced grape tomatoes and wrapped in leaf lettuce (for lack of collard greens).
  • This recipe definitely makes more then two burgers, unless your servings are huge—we divided it into four.

  1. It has a nice colour! I would like to try this fried; I imagine it would taste really good a little crispy.
