Cauliflower Popcorn

Continuing on my path to raw, I have been collecting snack recipes. Raw cauliflower popcorn was a recipe I'd heard about, but never could bring myself to make. Mostly because the ingredients list usually included nutritional yeast and I had no idea what that was, or where to get it. As it turned out, nutritional yeast was easy to find—I happened across it in the organics section of my local grocery store. 

It has become part of my daily food routine, as, since starting to eat it, my energy level has significantly improved. I don't know if its directly linked to the yeast, or its substantial amounts of B12, but whatever, I feel better, and it is delicious.

Anyways, I finally made cauliflower popcorn, and ate two batches of it in one weekend. I actually don't advise eating that much of it, but I do recommend making it. It does not taste a lot like popcorn, but it is crunchy and flavourful—James & I took it with us to the movies as a popcorn stand-in. Any seasoning amounts and combinations are possible, but I present to you the recipe I love.

Cauliflower Popcorn
(adapted from Guiding Instincts)

Ingredients:

• 1 head of cauliflower
• 20 grams olive oil
• 12 grams nutritional yeast (or to taste)
• 2 tsp cumin (or to taste)
• 2 tsp chili powder (or to taste)
• a few pinches of sea salt (to taste)

Instructions:

1. Cut cauliflower florets into bite-sized pieces.
2. Toss with olive oil until coated.
3. Add spices, salt and nutritional yeast and toss again until coated.
4. Eat immediately, or dehydrate at 115F until desired texture—I usually put it in the dehydrator before I go to bed, and take it out the next morning (so about 8-12 hours)

Cauliflower popcorn was even worth Tilly's constant begging.
