Bliss Balls


Remember when I used to keep a blog?


Because to write an explanation for the absence would be too difficult and sad, I'll instead write out this recipe for an easy, sweet snack.

There are a millions versions of bliss balls, but this one is inspired by those sold here in Nelson, BC (where I still live!), because they are the greatest. They are rich and sweet, and the best part is the crunch from the nuts and seeds.


I'm sure it won't be another year until my next appearance, but summer is here, the outdoors are calling, and for the first time in years and years, I live in a house with a yard in which to lay, and a garden in which to work. Yippee!

Bliss Balls
(makes about 12 balls at 35 grams each)

Ingredients:

  • 150 grams raw almond butter
  • 65 grams tahini
  • 60 grams honey
  • 60 grams shredded coconut
  • 60 grams raw sunflower seeds
  • 50 grams raisins
  • 25 grams sliced almonds
  • 1 tsp spirulina (or more)
  • 1/2 tsp fine sea salt
Instruction:

1. In a medium sized bowl, combine almond butter, tahini, honey, spirulina and salt.
2. Mix in remaining ingredients.
3. Portion, roll and store in refrigerator.

Notes:
  • The dough consistency is soft. If you find it too soft, add more shredded coconut, or even coconut flour. Try a tablespoon at a time until you get a consistency you like.
  • I sometimes substitute some or all of the almond butter for peanut butter, without too much of a flavour difference.
  • Pretty much everything else is also substitutable—pumpkin seeds for sunflower seeds, chlorella for spirulina, chocolate for raisins...

Rolled Sugar Cookies


Like shortbread, sugar cookies were a staple I thought I should be able to make using local sugar. This time, I stopped counting after trial batch number 6. While a nice tasting cookie was quickly achieved...a nice texture, not so much.

Coconut Milk Caramel Sauce


I've been tempted to try making candies and caramel sauce with honey for quite some time, but I've always been anxious about the potential of wasting large amounts of honey. I'm not certain what prompted me to finally do it, but I made caramel sauce today, using this recipe. Though I have recently re-embraced dairy, a couple of my loved ones are lactose intolerant, and as I intended to make this as a Christmas gift for one of them, I opted to try using coconut milk.

Pecan Shortbread


To somewhat resolve my inner conflict over the sugary food related things I do at work, I've decided that I'd really like to establish my own repertoire of basic recipes, made with local sugars...perhaps to appear in my imaginary bakery. I really enjoy working on recipes and testing my knowledge of baking theory to adapt them. Shortbread was a delicious and simple place to start. And pecan sandies are among James' favourite cookies.

Blueberry Dessert Scones


Sometimes I dream about opening my own bakery. And although it's far off, I've already decided that, if I do, these scones will be there. I love them, though they're very different from the Hearty Scones I've already posted. They're rich, sweet, short and crumbly. They like...melt in your mouth. This is one of my favourite recipes I've ever put on this blog.

Unfortunately, I don't get to do very much baking at my new job here in Toronto. Since I don't get my fix there, and I really have aspirations of becoming a great baker, I've started baking and experimenting a lot at home again. I've also taken out this book from my local library—trying to keep some sense of instructed learning.

Foraged Apple Crumble


I've yet to settle into Toronto living, and it makes me a bit anxious. Especially right now, when I know my garden at my family home is producing beets and carrots, and there are apples waiting to be picked from our tree.  Also, my mom tells me the cottage is beautiful this time of year.

Raw Hazelnut & Cacao Nib Refrigerator Cookies


As winter approaches, I am becoming less strict about my adherence to a raw diet. However, I have found I prefer many raw recipes to their unraw counterparts—I am maintaining my switch to cashew yogurt and nut milk, and zucchini hummus is just so delicious, and much easier to make than chickpea hummus. I really did miss tea, though.

Carrot Cake


Happy Easter!

This year, instead of a big Easter dinner, my family and I had Easter brunch with James and a few of our neighbours. This carrot cake is the result of my desire to contribute to our meal, a sudden realization that I have less than a month until my raw commitment commences, and an abundance of dehydrated almond pulp left over from making almond milk.

Sugar Cookies


Another Christmas has come and gone....boooo. It went by too quickly—I never had a chance to fully prepare. Next year, I resolve to avoid committing to too many big projects, so I have more time to realize the excitement of the season...definitely no more giant, sugary, baking trays.

Raw Food Night


Sorry for the delay, but I've been away, visiting my cottage, and overwhelmed with being home and trying to get organized. Anyways, as I was saying, from Williamstown, James and I headed to his family home in Swansea. One of the nights I was there, we had somewhat of a raw food dinner party. I finally got the raw food dinner I was longing for since my convocation...

Raw As I Can Get Cashew Cheesecake


HA, fooled you. One more planned blog post. Let´s hope I am safe and sound in Barcelona.

I love cheesecake. I could eat an entire cheesecake, yet I haven't had the motivation to try and make a sugar free version of real cheesecake.

However, I discovered at WOW (the raw foodist restaurant I am in love with) that I also love raw cashew cheesecake. I could easily eat an entire raw cheesecake, but I don't live near WOW anymore...so this is kind of a tribute to my long, lost love.

Rise Again Cinnamon Buns


I have been wanting to adapt a cinnamon bun recipe for a while, but I couldn't find one worth the trouble...

Until I remembered my mom used to make cinnamon buns all the time for my brother's early morning hockey practices—she was a very popular lady. Her recipe is from Aunt Bee's Mayberry Cookbook, chosen for its use of potato in the dough, which makes it so soft and delicious.

Strawberry Sorbet



No, I am not done my essay on The Canterbury Tales.

Yes, I am procrastinating.

I have a surplus of frozen strawberries from when they were on sale for a $1 per package. I move out on Saturday and don't think they'd make the 6 hour drive back home...I had no idea what to do with the two freezer bags full of strawberries

If you could food process bananas into ice cream...maybe strawberries would do something just as good?

Maple Walnut Banana Ice Cream: Heere is ended my tales of University


Today was my last day of undergraduate classes...ever.

I am so excited, a little sad...and so close to freedom. Only two exams and one ridiculously long essay about Chaucer's Canterbury Tales standing in my way.

I celebrated the end of classes and, hopefully, the beginning of Spring weather with some Maple Walnut Banana Ice Cream. I know I've made and posted this dessert before, but my previous instructions were vague...at best. This version is so much better—the lemon zest makes it taste like Spring, which is delicious.
